This is really a toss-up. Many grillers love the smoky flavor charcoal adds to burgers, chicken, and ribs, but not everyone. It’s worth noting that gas grills do have a smoky flavor, primarily due to grease dripping onto the grill surface. That said, we’re giving the edge here to charcoal. There’s nothing quite like the smell and flavor of a charcoal grill going in the backyard.
Preparing mouth-watering meals requires a degree of precision, especially if you want to use your grill to make more than just burgers and dogs. For temperature control, gas is the clear winner. You can make minute adjustments with the turn of the knob, especially within the normal temperature ranges used to make most meals.
There is a caveat, though. With a little experience and some trial and error, charcoal grills offer a wider range of temperatures than gas grills. This allows you to cook at very low temperatures over longer periods, or sear food at extremely hot temperatures.
If you love weeknight cookouts, convenience is crucial. A gas grill is ready to go in minutes and can achieve cooking temperatures in about the same amount of time it takes you to grab the barbecue sauce. Gas grills are easier to clean and require less maintenance, saving you time both before and after your meal.
